Recipe: 1 can garbonzo beans (chickpeas) 1 small garlic clove 1/2 cup tahini (sesame seed paste) 4 Tbls lemon juice 1/4 cup water 1/2 tsp salt 1/2 to 1 tsp tabasco sauce Paprika Olive oil Fresh parsley In food processor, using the blade, mix up beans and garlic until smooth. Add tahini and water. Add lemon juice and salt and tabasco to flavor. Mix until smooth. If too thick, add water. Transfer to shallow serving dish. Film top with oil, then sprinkle paprika and parsley on top. Cover and let stand a couple of hours for flavors to mix. Makes about 2 cups. Serve with baby carrots, sliced cucumbers, olives, toasted pita breads, red bell pepper slices, and other veggies. Makes a great summer meal, complete with protein! Personal note: Great with a dry red wine.
