Easy Breakfast Bake

Name: Isabell McGinnis
Base: Eielson AFB
Recipe: Ingredients: small bag of loose hashbrown potatoes (the cheap kind) 1/2 lb chopped up ham 1/2 chopped onion 1 can mushrooms (drained) chopped tomato 1 small can sliced and drained olives (optional) salt, peppe, paprika, pinch of cayenne pepper 9 eggs ( i know!) 1 bag shredded mexican cheese few slices bacon (optional) Recipe: Spray bottom of 9x13 casserole dish with non-stick spray, then add hashbrowns - enough to generously cover bottom of dish. Then top with chopped ham, onions, tomatoes, mushrooms and whatever else you like. Then in bowl, beat eggs well, add salt, pepper, paprika, cayenne pepper. Pour over dish. Cover top with shredded cheese (and a few cut up slices of uncooked bacon if you like), then cover with aluminum foil and bake for about 35-40 minutes @ 425F, take aluminum foil off dish, bake additional 5-10 minutes until cheese starts to brown a bit on the edges of dish. I know it sounds like a lot of work, but it is not and even my 6 year old and 13 month old can't get enough of this on a sat/sun morning! Leftovers can be stored in fridge and warmed up in microwave. Serves about 4 Instead of ham you could also use crumbled up breakfast sausage or anything else you can come up with. Kind of a foolproof recipe. Enjoy!
