7-Up Cake

Recipe: 7-UP CAKE 1 box Duncan Hines Lemon Supreme Cake Mix 1 small box instant lemon pudding 3/4 cup oil 4 eggs 8 oz. of 7-Up (or other lemon-lime carbonated drink) TOPPING: 1 ½ cups sugar 13 oz. can crushed pineapple, drained (save juice) 1 stick margarine 2 Tablespoons self-rising flour (reg. will work) 1 ½ cups coconut 1 ½ cups chopped pecans Mix cake ingredients well and pour into greased 9"x13"X2" pan. Bake at 350 for 20 to 25 mins. Punch holes in cake while warm and pour over the saved pineapple juice from topping.. For Topping: Melt margarine in a small sauce pan. Mix in sugar,flour and bring to a boil. Remove from heat and add coconut and pecans. Spread over warm cake. You can return it to the oven for a few mins., if you prefer, but that is not necessary.
