Arroz con Pollo -(Chicken&Rice)

Recipe: This dish is very economical and it serves a family of four for two days. You will need: 1 package of Tastybird thighs 1 box of Sazon Goya(con culantro y achiote) 1/2 cup of Kikkoman Soy Sauce 1 can of peas & carrots(drained) 1 small green pepper 1 regular sized onion 1 tablespoon of oregano 1 tablespoon of garlic powder 1 tablespoon of black pepper 2 tablespoon butter 2 cups of rice 4 eggs To prepare: Take a large pot and almost fill with water. Add oregano,garlic powder, and black pepper. Wash and place thighs in water with spices. Cook slowly for about two hours. Slice onion and pepper and leave aside until later. Remove thighs on a plate and let cool. Use water you boiled chicken in and measure out four cups of water, add in a seperate pot. Add rice in water and add two packets of Sazon. Mix and cook slowly. While it is cooking, take the chicken and shred it. Make sure you throw away the skin and bones and such, then put aside. When rice is done leave in pot for further use. Mix eggs and make an omelet, once cooked, cut in small squares. Take the shredded chicken and place in large frying pan with butter and mix until melted. Add onion, pepper, eggs, peas & carrots, two packets of Sazon, and soy sauce. Mix and let simmer for about 15 to 20 minutes on a low flame. Take a large bowl, add chicken and rice and mix together. Serve immediately and Enjoy!!
