CanEHdian panCAKES--not flapjacks!

Recipe: CanEHdian panCAKES; I make a double batch on Sunday and freeze them 3 to a freezer bag. My husband then heats them up every morning for breakfast. WAY cheaper than the waffles he used to have! In large bowl, mix together; 1 + 1/4 C flour 3 tsp baking powder 1/2 tsp salt In small bowl mix together: 1 beaten egg 1 C milk 2 tbsp oil 1 tbsp honey (will have to heat for about 1 minute on low power to melt the honey so it easily mixes in) Add wet ingredients to dry ingredients and mix together, taking care to leave some small lumps in the mixture. Spoon into buttered frying pan (I use an electric pan set at 260 degrees f). Pancake is ready to turn over when small holes appear around edge and top of cake is no longer moist. Once flipped, brown the cake and it's ready! This will make about 6 good-sized cakes. These fluff up and will not stay flat like a flapjack. Be sure to leave plenty of room in between them when you drop them into the frypan!
