Chicken Curry

Recipe: 1lb chicken cut into serving size, 2 carrots & 2 potato cut into serving size, 1 whole red bell pepper strips, medium onion chopped,2 cloves garlic,1 tbs.minced ginger root 1 can coconut milk,salt and pepper and 2-3 tbs soy sauce,3tbs.curry powder.........saute the garlic, onion and ginger root in a medium pan then add the chicken stir till the chicken turns white and add the soy sauce, potatoes, carrots, bell pepper,coconut milk,seasonings, and curry powder, simmer for 20 minutes or until the vegetable are tender. Serve hot with Rice
