Potato Candy

Recipe: My grandmother and my husband's grandmother made this every year during the holidays. Now I seem to have inherited this candy to make for everyone during the holidays. One small potato (size of med. egg) Peel potato, boil until soft. Let it cool, then using your mixer, mash it and add dash of salt, 1 teaspoon vanilla, and 1 box powdered sugar. It will turn to mush, get liquid and then start to stiffen up again. Once it gets hard enough that it forms a ball, roll it out on wax paper, using more powdered sugar as you would use flour to keep it from sticking. Try to roll out into a rectangle shape. Roll out as thin as you want. Spread with creamy peanut butter, roll up into a log. Wrap tightly to keep it from drying out, refrigerate for at least 1 hour. My grandmother would get it out after the meal, along with other candies, cakes and pies and just slice a few pieces off while leaving it on a plate. My husband's grandmother always has her's in a dish, individually wrapped slices.
