Vegetarian Stew w/Cracked Wheat

Recipe: Serving Size : 12 1 tablespoon olive oil 1 cup chopped onions 4 garlic cloves -- minced 1 medium zucchini -- thinly sliced 8 ounces fresh or canned mushrooms -- sliced 1 teaspoon Italian seasoning -- dried 1/2 teaspoon crushed red pepper 2 14 1/2 cans tomatoes -- diced 8 ounces tomato sauce 2 14 1/2 ounce cans vegetable stock 2/3 cup cracked wheat (bulgar) 1 15 1/2 ounce kidney beans, canned -- drained and rinsed 1 14 1/2 ounce green beans, canned -- drained 1/4 cup fresh parsley -- chopped 3/4 cup mozzarella cheese -- shredded Heat oil and sauté onion and garlic 5 minutes until tender. Add zucchini, mushrooms, Italian seasoning, red pepper, tomatoes, tomato sauce, vegetable stock and cracked wheat. Bring to boil, simmer 30 minutes. Uncover and add kidney beans, green beans and parsley. Heat through. Sprinkle cheese over stew and serve. Serve with crusty French bread
