Chris' Kissless Pizza

Recipe: Crust: 1pck active dry yeast, 1 1/4 cup hot tap water, 3 1/2 cup all purpose flour, 1 tsp salt. Mix water and yeast. Add 1 cup of flour and the salt, blend well. Combine 2 cups of flour, 1 cup at a time, blend until smooth. Turn dough onto counter with 1/2 cup flour. Dough should be smooth and firm. Return to mixing bowl and let rise 1 hour in warm (80 degree or so) place covered with a damp towel. Pesto: 6 tbsp olive oil, 1/2-3/4 garlic, 2 tsp salt, 1/4 cup of basil, 2 tbsp oregano, 1/2 onion, 2 tbsp parmesian cheese. Mince and combine all ingredients. Let rest to come alive 20-30 minutes. Pizza: 16oz cheese (mozzarella and colby Jack are great), Toppings to desired liking. Pull risen dough out and set on lightly floured surface. Roll out to slighty larger than cooking pan. Spread a thin layer of pesto on dough and roll in edges in to fit pan. Spread cheese, then other toppings. Place in in a preheated oven (425 degrees). Cook 25 minutes. When crust is golden and cheese is slightly brown, pull out of oven and spread remaining pesto sauce over cheese and edges of crust. Let cool 5 minutes before cutting. Enjoy!!!
