Jam Cake /c Brown Sugar Icing

Recipe: Jam Cake /c Brown Sugar Icing ----------------- 4 eggs 1 cup butter or margarine 2 cups white sugar 1 cup buttermilk 3 cups all-purpose flour 2 tablespoons cocoa 1 teaspoon allspice, nutmeg, cinnamon 1 teaspoon baking soda 1 cup nuts, chopped 1 cup raisins 1 small can crushed pineapple 1 can flaked coconut 1 pint jam ---------------- Mix eggs, butter and sugar by hand in large bowl. Combine flour, cocoa and spices. Dissolve soda in buttermilk. Add buttermilk to sugar mixture alternately with dry ingredients, starting and ending with dry ingredients. Add nuts, raisins, pineapple, coconut and jam. Bake in three greased pans for 20-30 minutes at 350 degrees. Frost with brown sugar icing. --------------------- Brown Sugar Icing 1 cup brown sugar ½ stick margarine ¼ cup milk Pinch of salt ---------------- Combine ingredients and bring to a boil. Add confectioner’s sugar until smooth enough to spread.
