1-1/2 lbs hamburger
2/3 cups pearl barley - (NOT instant barley)
3 cups sliced fresh carrots (NOT frozen or canned)
3 cups sliced celery
1-1/2 cups onions (I use regular brown skinned onions)
1-28 oz can diced tomatoes
1-8 oz can of tomato sauce
2 bay leaves
1/4 cup ketchup
4 tsps. beef bouillion granules (I like Wylers brand)
1 tsp salt
1/4 tsp pepper
8 cups of water
Cook hamburger, drain and return to the pot. Add in all of the other ingredients and simmer on low for 1-1/2 hours. I serve it with french bread or rolls. It's a great soup, good for you and basically no fat if you buy the good hamburger.
Makes about 12 cups. We eat if for dinner for 2 days and even have some leftover for lunches. It's really quite delicious. Remember to remove the 2 bay leaves before serving the soup. |
