Recipe: 1 package Italian sausage (mild) 1 large bell pepper, cubed 1 large onion, cubed 2-3 medium zucchini, sliced 3 potatoes, cubed 1 large can tomatoes, cubed ... reserve juice Remove casing from sausage (if desired), cut into bite sized pieces. In large pot, add a little oil and saute sausage until lightly browned. Add bell pepper and onion. Cook until they just start to lose crispness. Add tomatoes, reserved juice, zucchini, and potatoes. Add enough water to just cover everything. Season with a pinch of salt. Add basil, oregano, and pepper as you desire. Bring to a boil and simmer until veggies are cooked (about 30 minutes).
