all natural pam cooking spray
1 40 oz. can of sweet potatoes drained
4 tbsp. of butter
1/4 c. of pancake syrup
4 tbsp. of brown sugar
4 tbsp. of flaked coconut [optional]
1/3 c. pecan halves chopped finely
1 1/2 c. of miniture marshmallows
directions:
spray 8x8x2-inch baking dish with pam.
preheat oven to 350 degrees farenheight. in a 3-qt. sauce pan, melt butter; stir in syrup , sugar,pecans, and coconut[if using]. over low heat cook stirring 3-5 min. until blended. turn off heat and let sit. place the can of drained sweet potatoes in prepared baking dish. pour syrup mixture over the sweet potatoes then top with marshmallows.
bake 25 min. or until marshmallows are lightly browned. makes 6-8 servings.
