Recipe: 2 Chicken breasts 1/2 tsp. Cumin 1 Tbs. Oil 8 Flour tortillas 1 Tbs. Oil 8oz shredded Monterey Jack 1 10oz can diced chilies and tomatoes drained Cook chicken and cumin in oil until cooked through (3-4 minutes each side). Shred chicken with fork. Brush one side of each tortilla with oil. Oil side down in the same pan used for the chicken, layer tortilla, chicken, cheese, tomatoes, and second tortilla oil side up. Cook until light brown on the bottom. Flip and cook until second side is light brown. Serves 4
