Recipe: 1 1/4 Cup, plus 2 Tablespoons of warm water (110*) 4 Teaspoons yeast 1 Teaspoon white sugar 5 Cups Flour 1/2 Cup plus 3 Tablespoons white sugar 1 1/2 Teaspoons salt 1 Tablespoon oil 1/4 Cup of Baking Soda 2 Cups Very warm water (130-150*) 2 Tablespoons melted Butter Step 1, Dissolve Yeast and 1 Teaspoon sugar in the 1 1/4+2 Tablespoons water and let sit for 10 minutes or until foamy and creamy. Step 2, In a Large bowl mix the 5 cups of flour, 1/2 Cup+3 Tablespoons of white sugar and 1 1/2 teaspoons of salt and make a well inside the middle. Step 3, Pour Yeast mixture and oil inside of well and mix thoroughly ( If dough is dry add 1 Tablespoon water until slightly sticky) Step 4, Knead Dough for 3-5 minutes or until smooth. form into a ball Step 5, Oil Large bowl and roll dough ball . cover bowl with plastic wrap and let rise/rest 1 Hour (dough will not double, size barely changes) Step 6, Heat oven to 425* and pull off chunks of dough roughly the size of a 1/4 cup measuring cup. Step 7, Roll out into a rope and twist or knot Step 8, Mix 1/4 Cup of baking soda and 2 Cups of very warm water, and dip all of your stuffed pockets or pretzels in it. Step 9, Bake on ungreased cookie sheet for 7-10 minutes depending on how dark you want them. Step 10, Brush with melted Butter (you can also Salt them, or sprinkle with cinnamon and sugar, or melt velvetta to dip them in...) Step 11, ENJOY but remember to share ;)
