Breakfast Rice

Recipe: 1 pound Jimmy Dean sausage (sage or hot) 1 cup chopped onion 1 cup chopped celery 1/2 cup chopped red bell pepper 1/2 cup chopped yellow or green pepper 2 cloves garlic, minced 2 (10 ounce) cans cream of mushroom soup 1 (10 ounce) can cream of chicken soup 1 (10 ounce) can filled with water 1 cup rice 1/2 tsp. Pepper few dashes hot sauce Brown sausage in a large skillet. Remove the meat, leaving any fat from the meat. If sausage is too lean, add 1 tbsp. fat to skillet, heat and add vegetables and garlic. Saute till just soft. Add soups, water, pepper and hot sauce. Stir to combine well, then add rice and sausage and mix well. Pour into a casserole sprayed with PAM. Cover with foil and bake at 350 degrees for 1 hour. If you would like to really add to this meal, Top your casserole with 8 (hash brown) squares from freezer section in your grocery store. Bake 45 minutes covered, last 15 minutes, (REMOVE) foil and bake 15 minutes longer. I love it this way. It will serve 8 people. 4 if good and hungry.
