Recipe: Easy Enchilada 12 corn tortillas 1 28oz can of red enchilada sauce 2 cups cheddar cheese 1 ½ cups cooked shredded chicken 2 tbsp oil Coat each tortilla with oil, put on cookie sheet and bake at 500 degrees for seven minutes, take out and cool until warm to touch. Poor sauce on bottom of 9x13 glass baking dish to cover it. Spoon meat and cheese in tortilla, roll and place in dish, then cover with sauce and sprinkle with cheese. Bake in 400 degree oven for 15 minutes or until cheese is melted.
