Recipe: 1 onion 3 carrot chopped 3 celery stalks chopped 2 cloves garlic chopped 3/4 c quinoa uncooked 2 can white beans 1 can tomatoes 8 cups broth 1 tsp sweet basil 1 tsp thyme 1 pinch red pepper flakes 6 ounces chopped kale 3 tsp olive oil Sautee onions in olive oil for 5 min. add carrots, celery, garlic, and spices Sautee 3 min. Mix broth, quinoa, tomatoes, and Sautee onions, carrots, celery, and spices in a large pan simmer for 25 min. add beans and kale and simmer until kale is wilted.
