Savory Pumpkin Soup

Recipe: Savory Pumpkin Soup Ingredients: 1/2 cup onion 3 Tbsp. butter 2 cups mashed cooked pumpkin OR use 1- 1 1/2 cans of pumpkin puree 1 tsp. salt 1 Tbsp. sugar 1/4 tsp. nutmeg 1/4 tsp. ground pepper 3 cups chicken broth 1/2 cup half and half (or whole milk) Optional add ins: a few drops of hot sauce (i.e. tabasco, chili sauce), pepitas Instructions: Chop the onion, cook in the pan with the butter until onions are soft/translucent. Add the pumpkin into the pan in addition to the salt, sugar, nutmeg and pepper. Slowly add in the chicken broth and stir well. Heat the soup but be careful not to boil. Serve as is OR for a smoother soup, place in a blender and puree. Right before serving, pour in the half and half cream. Add-in additional seasonings, hot sauce, or pepitas as you desire. Makes ~4 servings.
