Peppermint Chocolate Brownie Cookies

Recipe: 2 large eggs 1 large egg yolk 1/2 tsp salt 1 tbs vanilla 1/4 tsp peppermint extract 1/3 cup of granulated sugar 1/3 cup of brown sugar (blend the ingredients until creamy) 1 1/4 cup all purpose flour 1/2 tsp baking powder 1 cup of butter diced into pieces 1 cup of cocoa powder 1/2 cup of baking chocolate or semisweet chocolate chips (blend) Then mix the 2 together. It will become thick, then I use a spoon and make balls. This should make about 2 1/2 dozen. I take the back of the spoon and flatten the ball onto the cookie sheet. Bake at 325 degrees for about 10-12 mins. I use crushed peppermint sticks (candy canes, miniature ones form the dollar store works the best). I crush on top as soon as the warm cookies come out of the oven and use the back of the spoon to smash them in. Let cool and enjoy, not all in one setting.
