INGREDIENTS: 1 tablespoon butter; 1 tablespoon unbleached flour (gluten-free will work also...); 1 medium head cauliflower (chopped); 1/2 cup chopped onion; 4 cups (less sodium) chicken broth (vegetarians can use vegetable broth...); and salt and pepper to taste... DIRECTIONS: Step 1: In a medium saucepan, make a roux by melting the butter on low heat and add the flour and stir about 2 minutes (a Roux ("roo") is a thickening agent for soups and sauces). Step 2: Add the chicken broth, the chopped onion, and the chopped cauliflower and set heat to medium. Bring to a boil, then cover and simmer over medium-low heat until vegetables are tender (about 20 minutes). Step 3: Puree with an immersion blender until smooth.
