Irish Potato Candy -- No Baking

Recipe: If you have never heard of Irish Potato Candy, then you are probably not from Pennsylvania. I always thought that they were candy made from potatoes. But they're not! Irish Potato Candies look like little potatoes, but they're no-cook coconut and cream cheese candies with a coating of ground cinnamon. They are essentially the coconut equivalent of chocolate truffles. Prep Time is 20 minutes and they are ready in in 30 minutes. INGREDIENTS: 1/4 cup butter, softened; 1/2 cup (8 ounce) package cream cheese; 1 teaspoon vanilla extract; 4 cups confectioners' sugar; 2 1/2 cups flaked coconut; and 1 tablespoon ground cinnamon. DIRECTIONS: In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioner's sugar and beat until smooth. using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set in refrigerator. If desired, you can roll potatoes in cinnamon again for a darker color.
