Quick Cajun Rice Skillet

Recipe: 1 tsp vegetable oil 1 onion chopped 1 med green pepper chopped 2 cloves of garlic minced 1 package turkey or lite kielbasa 1 can (14 1/2 oz) stewed tomatoes 1 can (14 1/2 oz) nonfat chicken broth 2 bags of Success Rice 1/4 tsp black pepper 1/2 tsp dried thyme 1/2 tsp dried oregano 1 can (15 oz) white beans, such as Northern 1 can (15 oz) red kidney beans Tabasco sauce, optional 1. Heat the oil over med heat in an extra-deep 12-inch nonstick skillet that has a lid. Add chopped onion, green pepper and garlic. 2. Cut the sausage into 1/4-inch thick slices, adding them to skillet as you slice. Add the tomatoes, chicken broth and rice (removed from bags). Bring the mixture to a boil, then reduce the heat to medium. Add the pepper, thyme and oregano. Cover the skillet and cook till rice is almost done. 3. Rinse and drain both cans of beans and gently add to skillet. Continue cooking until rice is completely cooked and beans hot. Serves 6.
