Well, here is a recipe to add to your arsenal for those quick and easy meals that is nutritious and "delish." This recipe make four servings and only takes 15-minutes to prepare... INGREDIENTS: 1 cup chopped plums (about 2 plums), Note: Peaches also work if plums are unavailable. 1 small jalapeno pepper, seeded and diced; 2 tablespoons chopped fresh basil; 2 tablespoons red onion; 2 teaspoons fresh line-juice; 3/4 teaspoon table salt, divided; 2 tablespoon brown sugar; 1/2 tesapoon ground cumin; 4 (4-ounce) chicken breast cutlets; and 2 teaspoons olive oil... DIRECTIONS: Step 1: Sitr together plums, the next 4 ingredients, and 1/4 teaspoon salt in a medium bowl... Step 2: Stir together brown sugar, cumin, and remaining 1/2 teaspoon salt ina a small bowl. Rub the chicken with the brown sugar mixture... Step 3: Cook the chicken in a hot oil in a grill pan or nonstick skillet over medium heat for 3-minutes on each side or until done.
