Oven Roasted Chicken

Recipe: ~1 (3 pound) whole chicken, giblets removed ~1 teaspoon salt and black pepper to taste ~1 teaspoon onion powder ~1 small onion, chopped ~1 stalk celery, leaves removed ~1 carrot, chopped ~½ cup olive oil Preheat oven to 350 degrees. Pat chicken dry with paper towels. Place chicken in a roasting pan, and season generously inside and out with salt, pepper and onion powder. Place onion, celery and carrots into cavity. Brush chicken with olive oil. Bake uncovered 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 180 degrees. Remove from heat, and baste with oil drippings. Cover with aluminum foil, and allow to rest about 30 minutes before serving.
