You can really use any meat you want Beef, Ham, our family prefers chicken.
One Chicken, or chicken pieces boil this down to make a good broth, Once this is done, debone the chicken and return it to the broth. Add potatoes. Take about 1 1/2 cups flour, 1 egg and water to make a dough. (For a whole chicken-you can adjust as necessary) Roll this to a thin dough. Cut into bite-size squares and add to the boiling broth. Cook until dough is done.
